Semi-cooked curd pasturized cows’ milk cheese. The chives are added at the end of the curling process, then salted in brine. The wheels have slightly convex faces. It has a pale yellow colour and a yellow —grey ἀrm texture. At the end of its aging process it will be covered by chives and packaged under vacuum-seal.
