La Struncatura is an artisanal pasta that has to be seen, touched and tasted to be fully understood. Its hand-made production according to an age-old recipe creates irregular pieces with rough surfaces which leave their distinctive marks on the soup or sauce.
This reinterprets Italian tradition, bringing us back to the old days of the smugglers of the Tyrrhenian Coast. Today La Struncatura has built an identity of its own to delight all palates. The pasta's uniqueness lies in its texture. Its gently curved shape, reminiscent of a crescendo, is created by extruding the dough through three different-sized dies. This gives Struncatura a somewhat rough surface that retains sauce beautifully!
It has a flavor to match any flavor, with its texture having both firmness and softness. The small ridges, parallel to the two lines molded down the center of this unique shape are also special. It is perfect with sauces, olive oil and can be enjoyed with cheese.
