ORGANOLEPTIC CHARACTERISTICS
It takes its name from the ancient custom of maturing this type of cheese in straw. The texture is white, compact and has no holes. When the scent is of freshly milked goat's milk it presents the typical aromatic notes. As it matures it becomes soft and creamy. The rind is white and with time it is marked by a hint of whitish mould and as the aromas and flavours become more intense and with great character.

SUGGESTED PAIRINGS
HONEY: Ailanto. Perfumed with hints of intense flowers, it is an intriguing combination with goat's "Pagliettina". FRUIT AND VEGETABLES IN GLASS: Red onion mustard, a nice match with the scents of goat's milk. WINE: Riesling produced in Piedmont, dry and with an interesting structure is ideal with this cheese because both are delicate and have a strong character.
